Next Big Future lays out some current research on minerals and related projects that have distributed supplement biscuits to large numbers of people. 

Magnesium and iodine are singled out particularly along with iron and zinc.  Calcium is noted as a well-known problem already. 

This is a simple-to-solve crisis any technocrat would address rapidly.
